Single Batch Recipe - Feeds 4-5 people
Qty Description
1 lb. ground beef, browned and drained
1 10 ¾ oz. can Campbell's Tomato Soup
1 14 oz. Can Stewed or Diced Tomatoes w/juice
1 15 oz. can Kidney or Chili Beans w/juice
½ cup Green Bell Pepper, seeded & diced
½ cup Spanish Onion, diced
1 tbsp Ken's RR Chili Seasoning mix
Institutional Recipe (~12 quarts)
Qty Description
6 lbs. Ground beef, browned and drained
1 #10 can (6 lb, 6 oz) Stewed or Diced Tomatoes w/juice
1 #10 can (6 lb, 10 oz) Kidney or Chili Beans w/juice
3 #2½ cans Tomato Soup (26 oz. each)
3 Green Bell Peppers, seeded & diced
2½ cups Spanish Onion, diced
6 tbsp Ken's RR Chili Seasoning mix
Cooking Directions
1. Combine all ingredients in a large pot
2. Stir well
3. Bring to near boiling, stirring frequently
4. Simmer on low heat for 1-2 hours or more if desired, stirring frequently*
1. Soy meat or ground turkey can be substituted for ground beef.
2. We like Brooks Beans a lot (Mild or Hot).
3. Make sure you simmer on LOW heat*.
*As Ken would frequently say, "it should be as hot as a roller bearing - not so hot that you can't touch it but hot enough you can't leave your hand on it."
Ken's Railroad Meatloaf Recipe
2 lbs. ground beef
1 egg
2 breadcrumbs
1/2 tsp salt
1 tsp pepper
1/2 tsp garlic powder
5 shakes McCormick Hamburger Seasoning
2 tsp. Ken's Railroad Chili Seasoning Mix
Sauce
1/2 cup brown sugar
1/2 cup Open Pit BBQ Sauce
2 tsp. Teriyaki sauce
1 tsp. Ken's Railroad Chili Seasoning Mix
Directions
1. Combine meatloaf and sauce ingredients separately
2. Pour sauce on before baking
3. Bake 1 hr at 350 degrees
Ken's Railroad Spaghetti Sauce (great spaghetti sauce in under 20 mins)
1.5 lbs ground beef
0.5-1 tbsp. Ken's Railroad Chili Seasoning
1 dash of salt & pepper
1 pinch of garlic salt
1 16 oz. jar of ready made spaghetti sauce
Directions
1. In a pan add ground beef, Ken's Railroad Chili Seasoning, salt, pepper and garlic salt.
2. Brown ingredients and drain.
3. Add ready made spaghetti sauce (Prego or equivalent).
